Indian Cooking Recipe : How to Make Lime Cream With Custard Apple Sauce
Ingredients for the Recipe
- 225 ml milk
- 200 ml cream
- 3 egg yolks
- 3 tbsp castor sugar
- 3 tbsp lime juice
- 2 tbsp whipped cream
- 1 tbsp powdered gelatine
- Rind of 1 lime
For the custard apple sauce :
- 8 custard apples
- 300 ml cooled sugar syrup
- Rose petals and leaves for garnishing
Recipe (How to Make):
- Boil together milk, cream and lime rind.
- In a separate bowl, beat egg yolks with sugar until light and fluffy.
- Pour milk/cream mixture into it, stirring constantly to ensure that the eggs
do not become scrambled.
- Return mixture to saucepan, stirring until thick enough to coat the back of
the spoon.
- Do not boil. Stain custard through a fine sieve and set aside.
- Dissolve gelatine in lime juice and add to the custard.
- Place mixture in freezer and every few minutes, stir well to break up any ice
particles that have begun to form.
- When the mixture thickens slightly, gently fold in whipped cream.
- Divide among six well-greased small moulds; cover and set in refrigerator.
To prepare the custard apple sauce :
- Separate the pulp from the seeds and mix with sugar syrup.
- Liquidize at low speed for a few minutes.
- To serve, turn out moulds on to six chilled plates.
- Surrounds with sauce and
garnish with the fresh rose petals and leaves, if desired.
