Indian Cooking Recipe : How to Make Pista Kaju Sandwich
Ingredients for the Recipe
For the Pista Kaju Sandwich :
For the Pista Barfi :
- 1 cup pistachios
- ½ cup sugar
- ¼ tsp elaichi powder
- a few drops of green food colouring
Recipe (How to Make):
For the Pista Barfi
- Soak the pistachios in warm water for 30 minutes.
- Drain all the water, peel the pistachios and blend them to a fine paste in a
mixer. Keep aside.
- Melt the sugar in ½ cup of water and prepare a syrup of one string consistency.
- Put the pista paste, elaichi powder and green colour and cook over a slow flame.
- Keep on stirring continuously for 5 to 7 minutes till the mixture leaves the
sides of the pan.
- Shift to a plate and cool slightly. Keep aside.
For the Filling :
- 3 tbsp sugar
- ½ cup chopped dry fruits (almonds, cashewnuts, walnuts)
- 3 tbsp powdered cashewnuts
- a few saffron strands
- ¼ tsp elaichi powder
For garnishing :
- edible silver leaves
- a few saffron strands, dissolved in milk
Recipe (How to Make):
- Soak the pistachios in warm water for 30 minutes.

- Melt the sugar in ½ cup of water and prepare a syrup of one string consistency.
- Put the pista paste, cardamom powder and green colour and cook over a slow flame.
- Keep on stirring continuously for 5 to 7 minutes till the mixture leaves the
sides of the pan.
- Shift to a plate and cool slightly. Keep aside.
- Divide the mixture into 2 equal parts.
- Roll out each portion with the help of a greased rolling pin on a sheet of plastic
into a 125 mm. (5") diameter circle and keep covered.
For the Filling :
- In a pan, mix the sugar with 4 tbsp of water and boil to get a syrup of 1 string
consistency
- Put all the other ingredients and stir well for 2 to 3 minutes. Keep aside to
cool.
How to Proceed :
- Arrange one pista barfi circle on a plate and spread the filling mixture evenly
on it.
- Top with the second pista barfi circle and keep it to set for 20 to 30 minutes.
- Cover with silver varq and slice the sandwich into 8 wedges.
